Originally founded in 1603, Kikkoman is one of the oldest Japanese food manufacturers. Today, the Kikkoman Corporation produces soy sauce, mirin, shōchū, sake, and seasoning products for an international market. Kikkoman’s Ponzu Citrus Seasoned Soy Sauce (Lemon) is a vibrant and flavourful Ponzu-style sauce. Ponzu is a citrus-based sauce that is commonly used in Japanese cuisine, in particular with seafood dishes. It is typically tart with a thin, watery consistency. Ponzu is derived from an old Dutch word “pons”, meaning “punch”, as the original recipe very much focused on the use of natural fruit juices. Ponzu is usually made by simmering mirin, rice vinegar, seaweed, and tuna flakes over a medium heat, before adding citrus juice - typically from the Japanese Yuzu fruit. Yuzu is the citrus fruit of the plant that is cultivated in East Asia, and a very popular ingredient in Japanese cuisine. Yuzu are very sour and taste like a mix between lemons, grapefruit, and sweet oranges. They're incredibly fragrant and known for their bold taste. Kikkoman’s sauce is what is known as a “Ponzu Shōyu” or a Ponzu sauce that has been seasoned with the addition of dark soy sauce. The resulting sauce is all at once, salty, rich, and tangy with plenty of umami notes. It can be used as a dipping sauce or to season dishes, such as stir-fries or seafood barbecue. Once opened, keep refrigerated.
